Botrytis Riesling

Josef Chromy Botrytis Riesling is made with Botrytis affected Riesling grapes grown on the estate vineyard at Relbia in northern Tasmania.
Carefully monitored, the fruit is handpicked when the balance between the delicate varietal characters and the richer Botrytis flavours is optimum. Gentle pressing begins as soon as the grapes arrive at the winery and typically lasts for 48 hours.
After resting in stainless steel tanks, the juice is racked from solids and fermented at cool temperatures with a neutral yeast. The ferment is stopped at a low alcohol level so the wine retains its fresh Riesling flavours.
Bright yellow, Josef Chromy Botrytis Riesling melds varietal Riesling characters with preserved citrus, Botrytis notes and cool climate acidity. Cellaring potential is 12 years.
